"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
5-8 medium sized garden fresh tomatoes
1 full garlic bulb
2 hot peppers or more
1 large bell pepper
1 large white onion
1 can large black olives
1 T. olive oil
2 limes
2 bunches cilantro
2 T.kosher salt
1 T. orange juice

Directions:
Directions:
Slightly char the following in an oven or on a grill: All but 2 tomatoes, bell pepper, hot peppers, onion, garlic bulb.
Add the following to your blender: Juice from both limes, kosher salt (regular salt won't work), 1 T. orange juice, 1 T. olive oil, all (yep, the entire garlic bulb) cloves of the garlic bulb (remove the husk), and the hot peppers. Add 2-3 of the charred tomatoes and about half a bunch of cilantro. Pulse the blender to achieve desired consistency for the puree. Important: "Blender Boy" tip #1: strongly encourage the use of the blender lid unless your kitchen needs to be painted!
Slowly add the remaining charred tomatoes and cilantro, saving a small portion of the cilantro for topping the salsa. Pour the contents into a large bowl.
Blender Boy tip #2: Be sure the base is on the blender or contents have a way of ending up on the floor. If this happens, call your dog for cleaning assistance before before your wife comes home. Beware of adverse impact of hot peppers on dog.
Dice entire onion, green pepper, can of olives, and remaining tomatoes and add to the mix. Chop remaining cilantro and sprinkle on top of the salsa. Salsa gets better as the flavors have chance to blend.
Pull out your Jimmy Buffett album, crank to full volume, and enjoy!

Personal Notes:
Remember, this ain't for sissies, and for the real men, add a couple of extra hot peppers. Chicks dig garlic breath, so don't be shy about adding garlic.
