2 C. sugar
1 C light corn syrup
1 C. water
1/4 tsp salt
3 C raw peanuts
1 T butter or margarine
2 tsp. vanilla
2 tsp baking soda

Directions:
Butter 2 jelly roll pans (15x10x1) Mix sugar, syrup, salt and water in large heavy saucepan. cover; heat to boiling. Uncover and cook rapidly to 236 degrees - soft ball. Stir in nuts slowly and cook rapidly to 280 degrees - hard ball. Stir in butter, continue cooking to 300 degrees - hard crack, Remove from heat. Stir in vanilla; sprinkle baking soda over top quickly, then stir vigorously 15 seconds or until mixture is puffy. Pour in to pans. Pull apart with buttered forks, or spread out with back of buttered spoon. Cool completely and break into bite-size pieces (Makes about two pounds)

The thinner you can spread this out the better it is. I have starting using a mixture of walnuts and pecans instead of peanuts. Both are really yummy.
