Pork tenderloin
½ cup of butter
1 tablespoon of lemon juice
Bit of shredded lemon rind
4 drops of Tabasco Sauce
2 tablespoons of onion
2 tablespoons of brown sugar
1 tablespoon of Coriander
¼ tsp. each of Cumin, Ginger, Salt and Pepper
1 crushed garlic clove
½ cup Teriyaki Sauce

Directions:

Marinade: (Makes enough for one Tenderloin)

Melt butter; mix in lemon juice, lemon rind, Tabasco sauce, onion, brown sugar,coriander, cumin, ginger, salt, pepper, garlic and Teriyaki sauce.
Simmer for 5 minutes. Let cool before adding meat.


Meat:
Cut fat and sinew off pork tenderloin; slice meat into ¾ inch cubes; stir into sauce; and place in fridge to marinate overnight.
Grill until pork is thoroughly cooked. Do not overcook!
Serve with rice, spinach salad and wine.
