8lbs butternut squash
1/3 plus 1tbsp veg oil
Salt and freshly ground pepper
2 tbsp black mustard seeds
2 garlic cloves minced
1 medium onion finely chopped
1 t ground coriander
1 t tumeric
1/4 t crushed red pepper
1/4 C water

Directions:
Preheat oven to 400. On 2 large rimmed baking sheets drizzle squash halves w oil and season w salt and pepper. Turn squash halves cut side down and roast for 45 min

Meanwhile, in a large pot heat 1 t oil. Add mustard seeds and cook over moderately high heat shaking pan until they pop. Transfer seeds out. Add remaining 1/3 c of oil to pot. Add garlic, onion and cook over moderate heat until softened 7min. Add coriander, tumeric, crushed red pepper for one min. Stir. Remove fm heat

Using a large spoon, scrape out squash add to pot. Add water and cook over med-high. Stir and lightly mash until blended. Season w salt as pepper. Top w mustard seeds
