2 ripe Haas Avacados
1/4 red onion, copped
1 jalapeņo pepper, seeded and minced finely
1 roma tomato, seeded and diced (only the flesh)
2 T fresh lemon juice
1 t kosher salt
1/4 t fresh ground pepper
1-2 T olive oil

Directions:
Directions:
Scoop out avacados into a large bowl and splash with lemon juice and olive oil.

Chop onion, mince jalapeņo and dice tomato and add.

Add salt and pepper.

Use knife to cut thru ingredients in bowl until you get the texture you like. I prefer a chunky quacamole.

Store in container with a thin film of olive oil on top and plastic wrap touching the surface to avoid oxidation.
