French Onion Soup Recipe

1/2 C butter
4 onions, sliced
3 garlic cloves, minced
3 bay leaves
2 fresh thyme sprigs
1 C red wine
3 heaping T flour
2 quarts beef broth
kosher salt and ground black pepper

Directions:
Directions:
In a large pot over medium heat, melt butter and add onions, garlic, bay leaves, thyme, salt and pepper. Cook until onions are very soft and caramelized. About 25 minutes.

Add wine, bring to boil, reduce heat and simmer until wine is evaporated and onions are dry.

Discard bay leaves and thyme sprigs, dust with flour. Reduce heat to medium low and cook for 10 minutes.

Add beef broth, bring back to simmer and cook 10 minutes.

Season to taste. (Approximately 2 t kosher salt after adding stock, but may vary according to how salty your stock is).

If I am feeling particularly ambitious, or having guests, I make home made croutons and top with Gruyere cheese and place under a broiler.
