2 lb. cooked shrimp, peeled, deveined
1 medium red onion, slice thin lengthwise
2 medium lemons, sliced thin
1 cup pitted black olives, drain
1/2 cup olive oil
1/3 cup minced parsley
3 tbsp. lemon juice
3 tbsp. red wine vinegar
1 garlic clove, minced
1 bay leaf
1 tbsp. minced fresh basil or 1 tsp. dry basil
1 tsp. salt
1 tsp. ground mustard
1/4 tsp. pepper

Directions:
Directions:
In 3 quart glass serving bowl, combine shrimp, onion, lemon slices, olives. In a jar, combine remaining ingredients and shake well. Pour over shrimp and stir gently to coat. Cover and refrigerate 24 hours, stir occasionally. Discard bay leaf before serving.
