15 oz can corn, drain
13 oz can black beans, rinsed and drained
4 scallions, sliced
1 red pepper, diced
3/4 lb. cooked chicken, diced
2 limes, juiced
1/4 cup olive oil
1 tsp. ground cumin
salt and pepper
tortilla chips
shredded lettuce
1 avocado, diced

Directions:
Directions:
In large bowl combine corn, beans, scallion, red pepper, chicken, lime juice, oil, cumin, salt and pepper. Refrigerate 30 minutes, to 1 day. Stir before serving. Serve over lettuce with crushed tortilla chips and avocado.
