3 cups chopped cooked chicken
2 cups diced mango
scallion or red onion to taste, chop fine
1 jalapeņo, minced
1/4 cup mayonnaise (light)
1/4 cup sour cream (light)
1/2 tsp. lime zest
2 tbsp. lime juice
1 garlic clove, minced
1/4 tsp. salt

Directions:
Directions:
Combine chicken, mango, scallion, jalapeņo. In a small bowl, combine mayonnaise, sour cream, lime zest, lime juice, garlic and salt. Taste and adjust amount of zest and juice according to taste. Spoon 1/2 of the dressing over the chicken mixture and toss gently. Let sit at room temperature for 10 minutes or refrigerate 2 hours before serving over mixed greens. Add more dressing as needed.
