6 T ground dried New Mexico or California chillies
3 T salad oil
approx.1/2 tsp pepper
approx. 1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp cayenne
1/2 tsp ground cumin
2 whole cloves
1 dried bay leaf, broken into pieces
1 lb boned, skinned firm-flesh fish such as halibut, mahi mahi or rock fish
shredded cabbage
fresh lime juice

Lone Star Cilantro-Jalapeno Mayonnaise:
1 3/4 C mayonnaise
2 T water
2 T distilled white vinegar
1 rinsed and stemmed fresh jalapeno chili with seeds removed
1 peeled garlic clove
1/2 C lightly packed fresh cilantro
1/4 teaspoon pepper
salt to taste
Put all ingredients in blender, blend until smooth

Lone Star Pico De Gallo:
2 C diced tomatoes
1/2 C finely diced onion
2T minced fresh jalapeno chillies
1/4 C minced fresh cilantro
2 T fresh lime juice
1/2 tsp garlic powder
salt to taste

In a large bowl, mix ground dried chillies, oil, pepper, salt, garlic powder, cayenne, cumin, cloves and bay leaf.
Rinse fish and pat dry. Add to bowl and turn to coat with marinade; cover and chill at least 1 hour, mixing often.
Lift fish from marinade and arrange in 9x13 pan. Discard marinade.
Broil fish 4 to 5 inches from heat until opaque but still moist. (cut to check) about 5 minutes for 1/2 inch pieces. Transfer fish to paper towels. Cut fish along the grain into 1/2 inch slices, season to taste with salt. Serve wrapped in flour tortilla (Tortilla Land brand is our favorite) with shredded cabbage, pico de gallo and cilantro mayonnaise, and a slice or two of fresh lime on the side.

Lone Star restaurant in Salt Lake is famous for its fish tacos! When these recipes appeared in the newspaper, we were delighted!

Can be served with fresh grilled jalapenos on the side!
