For matzo balls, I just use the Manischewitz boxed mix. The key to “golf ball hard” matzo balls, the strong preference of the Zaideman males (and others), is to double the dry mixture to the liquid called for on the instructions. They can be made ahead & frozen, then thaw & add to soup with enough time to make sure they get hot and soak up the chicken broth flavor.

For regular or not-so-hard matzo balls, just follow the instructions on the box.
