1-2 cups flour, browned in oven
Drippings from turkey, as much as you can get
Turkey Stock: 4 cups or so

Brown flour in 350 oven, stirring occasionally until toasty brown (takes about 30-40 minutes). Keep checking it & stirring. Smells great. After it's cool, sift & store or use. Can be done a day or more in advance.

Drain off drippings from turkey into a large pot. Get drippings very hot, then add the browned flour slowly, stirring continuously so you won't have lumps.

Then add the turkey stock or water (or some add milk) slowly, still stirring constantly to get to desired thickness. It will thicken up for awhile, keep adding liquid to keep to right consistency. Add salt & pepper to taste. Gravy needs to cook for awhile to taste good, so figure that into your timing.
