1-14oz. bag sweetened shredded coconut
1-14oz. can sweetened condensed milk
1 tsp. vanilla
2 extra large egg whites at room temp
1/4 t. salt
8 oz. semisweet chocolate, chopped

Directions:
Directions:
Preheat oven to 325º Combine coconut, condensed milk and vanilla in a large bowl. Whip egg whites and salt until they hold medium firm peaks. Carefully fold egg whites into coconut mixture.
Drop batter onto parchment lined baking sheets using 2 tsp. batter. Bake for 25 -30 mins or until golden brown. Cool completely.
Melt chocolate in the microwave oven on high power for 1-2 minutes, stirring once. Stir until chocolate is completely melted. Dip half of each macaroon in the chocolate and set on a sheet of parchment. Cool until chocolate sets.
