1 lb. lean pork loin roast, boneless
3 bacon slices
1/2 lb. smoked sausage (andoullie or turkey)
2 c. onions, chopped
1 1/2 c. carrots, chopped
1 1/2 c. celery, chopped
1 tsp. dried thyme
1/2 tsp. dried rosemary
3 cloves garlic, minced
1 tsp. salt
1/2 tsp. pepper
2 - 14.5 oz. diced tomatoes
2 - 15 oz. Great Northern beans; drained, rinsed

Parmesan cheese
fresh parsley (chopped)

Cut pork into 1 inch cubes. Cook bacon in large skillet until crisp. Crumble the bacon slices and set aside. Saute onion, carrots, celery, garlic, rosemary and thyme in bacon grease about 3 minutes or until tender. Stir in crumbled bacon, salt, pepper and tomatoes. Bring to boil.

Meanwhile mash 1/2 beans with potato masher. Combine mashed beans, remaining beans, pork and sausage. Place 1/2 of bean mixture in bottom of slow cooker and top with 1/2 of tomato mixture. Repeat layers. Cook in slow cooker for 1 hour on high. Reduce to low setting and cook four more hours. Garnish with Parmesan and chopped parley before serving. Serve with crusty bread or rolls.
