3 C flour
3/4 t baking powder
1/4 t salt
1 C unsalted butter
1 C sugar
1 egg, beaten
1 T milk
Zest of two Lemons

Directions:
Directions:
Sift flour, baking powder and salt and set aside.

Beat sugar and room temperature butter until light in color. Add egg, milk and lemon zest and beat to combine.

Gradually add flour mixture on low just until the dough comes together.

Divide in half and roll into a log and refrigerate 2 hours.

One log at a time, unwrap and slice as thin as you can and place on parchment paper lined cooking sheet. Sprinkle with sugar.

Bake at 375º for 7-9 minutes until the edges just turn light golden.

These are awesome. Not too sweet and very crispy with just a hint of lemon. The key is to slice them very very thin. Use a sharp knife and make sure they are very cold.
