1 lb. dried black eyed peas
1 large onion, sliced
1 large ham hock
2-4 slices cooked bacon
1/8 t cayenne pepper
1/2 t garlic powder or 1 fresh garlic clove minced
1/2 t salt

Directions:
Directions:
Cover peas with 3 inches of water in a large sauce pan. Bring water to boil, reduce heat and simmer covered :45 to :60 minutes.

In a slow cooker, put ham hock, sliced onion, bacon, pepper, garlic and salt.

Pour in 3 C water, cover and cook on high until the peas are ready to be added.

When the peas are tender, Drain and transfer to slow cooker. Reduce heat to low, cover and cook 7-9 hours. If you like it more soup-like, add add'l water.

Taste and adjust seasoning.

Serve with Cheddar Jalapeņo Cornbread!!!
