2 T Olive oil
1 Spanish Onion, diced
3 Garlic Cloves, minced
1 C Ketchup
1 T Dijon Mustard (heaping)
1 T Red Wine Vinegar
1 T Worchestershire Sauce
1 Canned Chipotle Chile (minced)*
2 T Chili Powder
1 T Paprika
2 T Dark Brown Sugar
1 T Honey
1 T Molasses
Salt and Pepper

Saute the onion in olive oil until translucent and add garlic. Cook a couple more minutes to warm thru...don't burn.

Dump the rest of the ingredients in and bring to a simmer. Cover pan and lover heat and cook for 15-20 minutes.

This is a great sauce for most any meat you can cook on a grill.

* Be careful with the Chipotle Chile. I like hot food and I used just one and it was very hot. You may want to use half of one, but don't leave it out. This is the one ingredient that makes this "Southwestern-ish"!
