3 eggs
1 cup oil
1 1/2 cups sugar
3 medium size zucchini, grated ( 2 cups)
2 teaspoons vanilla
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon salt

Directions:
Directions:
Beat eggs lightly. Stir in oil, sugar, zucchini and vanilla. Add flour, baking powder, baking soda, cinnamon and salt. Put in loaf pans and bake at 375º for 45 minutes to 1 hour. For muffins, bake 15-20 minutes. Do not over bake. Remove from pan when cool.
