1 pkg (6 oz) Stove Top Stuffing Mix (I use one box)
1 c. water
6 boneless pork chops
1 pkg. (10 oz.) frozen chopped broccoli; thawed and drained ( I use fresh and steam it)
1 can (10 3/4 oz.) 98% fat-free condensed cream of mushroom or chicken soup
1/2 c. fat free milk
2 T. grated Parmesan cheese

Preheat oven to 400º. Combine stuffing mix and water in large bowl; let stand 5 minutes. Meanwhile, pound the chops to 1/4 inch thickness using meat mallet. Add broccoli to stuffing, mix lightly. Spread evenly over chops to within 1/2 inch of outer edges. Roll up each chop from one of the short ends, enclose the stuffing mixture.
Place chops seam side down in pan. Mix soup & milk; pour over chops. I put the rest of the stuffing on top and in between the chops and add a little more milk. Bake 30 minutes or until done. Sprinkle the Parmesan cheese over the top the last 10 minutes.
