3-4 boneless Chicken Breasts
1/4 tsp. pepper
1 tbsp. oil
1 bundle of fresh asparagus or broccoli ( or 10 oz frozen), washed & cut into pieces.
1-10 oz can of cream of chicken soup
1/2 cup mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1 cup grated cheddar cheese

1. Cut chicken into 2" x 4" pieces & sprinkle with pepper. Saute slowly in oil over medium heat until white & opaque, about 6 minutes; drain.
2. Cook asparagus or broccoli until tender crisp, drain & arrange in bottom of casserole dish.
3. Layer chicken on top of vegetables.
4. Mix soup, mayonnaise, curry, & lemon juice together & pour over chicken.
5. Sprinkle top with cheddar cheese & bake uncovered at 375º F (190º C) for 30 -35 minutes.

To save on time & dishes I microwave the vegetables directly in the casserole dish with 1/4 cup water, cover & cook about 7 minutes, strain. Then continue to #3.
Can use light chicken soup & light mayonnaise, & low fat cheddar.
Goes well with rice & salad.
I serve this for company & it is well-liked.
