Meatloaf:
1 egg, slightly beaten
6 garlic cloves minced
3 T. dried oregano
1 1/2 tsp kosher salt
1 tsp pepper
1 lb ground lamb
1 lb ground beef

Tzatziki Sauce:
1 c. plain yogurt
1 medium cucumber, peeled, seeded and chopped
2 T. lemon juice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder

8 whole gyro-style pitas (6 inches diameter)
3 T. olive oil
sliced tomato and onions for garnish

In a large bowl combine, egg, garlic, oregano, kosher salt and pepper. Add lamb and ground beef. Mix very well. Pat mixture into an ungreased 9 x 5 x 3 inch loaf pan. Bake uncovered at 350 degrees for 60-70 minutes or until no pink remains and meat thermometer reads 160 degrees. Cool completely on wire rack and refrigerate 1-2 hours. To make Tzatziki sauce, combine the yogurt, cucumber, lemon juice, garlic powder, salt and pepper. Cover and refrigerate until serving. Brush the pita breads with olive oil; and heat on a lightly greased griddle for 1 minute on each side or until warmed. Cut the meat loaf into very thin slices. In a large skillet, fry the meat loaf in the remaining oil in batches until crisp. On each pita bread, layer tomato, onion and meat loaf slices; top with some Tzatziki sauce. Carefully fold the pitas in half. Serve with remaining sauce. Makes 8 servings.
