4-5 lbs. red beets
3 c. sugar
3 c. cider vinegar
6 c. water
1/2 c. pickling spices.

Directions:
Directions:
Boil red beets in 6 c. water until just tender. Cool, then peel and cut in desired pieces. Combine sugar, vinegar and 3 c. of the water used to boil the beets. Put spices in cloth bag - bring to a full boil - add red beets and bring to a boil. Put in sterilized jars and seal. Throw spices out.
