Cake:
1 c. sugar
1/2 c. shortening
1 egg
1 t. baking soda
1/2 c. warm coffee
pinch of salt
pinch of cinnamon
1 1/2 c. diced apples
1 c. flour

Topping:
1/2 c. brown sugar
1/2 t. cinnamon
1/2 t. nutmeg
Directions:
Directions:
Dissolve baking soda in coffee.

Mix together shortening and sugar. Add egg. Add coffee/soda mixture. Add salt, cinnamon and flour. Mix well. Fold in diced apples.


Pour into greased baking pan.
Mix together topping ingredients and sprinkle over top of cake mixture.

Bake 45 minutes at 350º
