Grandma's World Famous Caramel Rolls Recipe

Ingredients: 3 c. boiling water 1 c. shortening 1 c. sugar
18 c. flour 2 t. salt 6 eggs 2 Fleischmann yeast cubes
Caramel: 1 c. heavy cream 1 c. brown sugar

Directions:Bring water to boil, add shortening and sugar. Stir until shortening and sugar are dissolved. Cool to lukewarm. Add 2 cubes Fleischmann yeast.
Add 6 cups flour to yeast mixture. Mix well. Add 2 T. salt. Mix well. You can probably still use the electric hand mixer at this point.
Add 6 eggs, 1 at a time. Mix well Add 12 c. flour while mixing. The dough may need to be mixed by hand at this point.
Put dough into greased pan to rise. Place in refrigerator. Punch down the dough as needed.
The following morning you may start using the dough. This dough will keep in the refrigerator 3-4 days, so take off only what you need to make fresh rolls. 1/3 of dough makes 1 large pan of rolls.
Roll out your dough on lightly floured board. Spread with melted butter and cinnamon and sugar. Roll up with cinnamon mixture in center. Slice the rolls to desired thickness, keeping them even so they bake evenly. Place rolls in pan and let rise again until they are approximately double in size.
Make caramel topping by heating in saucepan and mixing until the sugar is all dissolved. Carefully pour over top of rolls in pan. As the rolls bake the caramel will seep in between the rolls.
When the rolls are finished carefully turn the pan upside down and let the caramel drip from pan before removing the pan.
Bake 45 minutes at 350º |
