4 lbs. carrots
1/2 stick butter
1 1/2 C sugar
1 C orange juice
nutmeg to taste
raisins (optional)

Serves: 8
Preparation Time: 20 minutes

Boil carrots until tender. Drain well. In small saucepan, melt butter and add remaining ingredients, stirring until well blended. Put carrots in casserole and pour syrup over all. Bake 15 minutes at 350º.

This is from an old cookbook I have by Beth Bowen, Governor Bowen's wife. Alvania was their cook at the Governor's Residence. This is delicious.
