1 lb. fresh green beans, trimmed
1 bunch green onions, chopped
1/4 c. fresh parsley, chopped



Vinaigrette:
2 T. vegetable oil
1 T. white vinegar
1 T. Dijon mustard
salt and pepper

Serves: 4

Blanche green beans until tender--don't overcook. Remove and let cool. Combine vinaigrette ingredients and toss with beans. Chop green onion and fresh parsley and put over beans. Refrigerate several hours and serve cold.
