2 lb cooking apples, peeled and cored
2 med/large onions
1 lemon- zest and juice
1 lb dark brown sugar
2 tsp ground ginger
1 tsp mustard seed
1 tsp salt
3/4 pint (15 oz) brown vinegar (malt vinegar)
8 oz raisins

Directions:

Mince together apples and onions. Add remaining ingredients.
Cook in preserving pan, bring to the boil and then simmer, stirring frequently, until the liquid has mostly evaporated , about an hour.

Leave to cool slightly and put into jars. Keep for 3-4 weeks before using. Makes about 5 lb.

Alternatively, and easier, put into a large glass or other microwavable bowl. Cook in microwave on High, for 25-30 minutes, stirring every 5 minutes.
