1 can black beans, rinsed and drained
1 mango, diced
1 red onion, diced
2/3 cup canola oil, less 1 tbsp.
1/3 cup vinegar
dash salt
dash pepper
2 tsp. sugar (or sweetener)
dash celery salt (optional)

Directions:
Directions:
Rinse and drain the black beans. Peal and dice the mango and combine it with the diced red onion and black beans. Set aside.

Mix oil, vinegar, salt, pepper, sugar and celery salt. Pour over black bean mixture. Chill and serve.

You will not need all of the vinegar and oil dressing for this recipe. We usually use around 1/2 of it for the salsa.
