3 chicken breasts
1 can chicken broth
2 T. butter
1 small onion, chopped
3 stalks celery, chopped
2 carrots, chopped
1 c. frozen peas
2 potatoes, diced
1 can cream of chicken soup
salt and pepper to taste
Biscuits:
1 c. all purpose flour
1 T. sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/3 c. milk
3 T. vegetable oil
1 T. minced fresh parsley

Directions:
Directions:
Poach chicken breasts in 1 can of chicken broth until tender, remove chicken breasts and chop meat. Save broth and add diced potatoes and cook until tender. In a medium saucepan, saute onions, carrots and celery in 2 T. butter until vegetables are almost done. Add potatoes, broth, frozen peas and cream of chicken soup. Add salt and pepper to taste. Heat to a boil. Pour into a casserole dish. To prepare drop biscuits, combine flour, sugar, baking powder and salt in a bowl. combine milk, oil and parsley and stir into dry ingredients just until combined. Drop biscuit batter by rounded tablespoonfuls onto chicken mixture. Bake uncovered at 375 for 30-40 minutes or until biscuits are lightly browned. Makes 4-6 servings.
