Pepper Jack Cheese

Wash peppers and gently pat dry. Rub a small amount of olive oil on peppers. Make a slice on top of pepper lengthwise. Hold open slice with fingers and shove a slice of cheese in hole. Bake at 400º for about 12 minutes. Peppers will turn slightly brown in some areas and cheese melts.
