3/4 cup of butter
1 1/2 cup of dark brown sugar
2 tbsp. of water
12 oz chocolate chips

2 eggs
2 1/2 cup of flour
1 1/4 tsp baking soda
1/2 tsp salt
2 packages of Andes Mints

Directions:
Directions:
Melt butter in saucepan with brown sugar and water. Add chocolate chips until partially melted. Remove from heat, and pour into large bowl and cool for 10 minutes. Beat eggs in, one at a time. Add flour, baking soda and salt. Beat until just blended.

Chill dough for one hour.

Line cookie sheets with parchment paper. Roll dough into balls and bake at 350º for 10 to 13 minutes.

Immediately after removing from oven place one unwrapped mint on top of each cookie. Spread mint when melted and let cool.
