Ingredients: 3/4 c. firmly packed brown sugar 3/4 c. sugar 1 c. butter or margarine (or a combination of shortening and margarine) 2 eggs 1 tsp. vanilla extract 2 1/4 c. flour 1 tsp. salt 1 tsp. baking soda 12 oz. pkg chocolate chips 1 c. chopped nuts (if desired)

Directions:Cream together brown sugar, white sugar, margarine, eggs and vanilla extract. Combine flour, salt and baking soda and add to sugar mixture. When well mixed, add chocolate chips and nuts. Drop by about one tablespoon each on to sprayed cookie sheet. Bake in preheated oven 8 - 10 min. Now then - there is a simple reason why my cookies are enjoyed so much. I take them out of the oven before they are done. Yes, you read that right - when they are lightly brown around the edge and lightly brown on top. Quickly remove them to wax paper. They will finish cooking and be soft and moist. They are a little bit difficult to remove from cookie sheet and will most likely be scrunched up a bit but that's okay. They taste wonderful. |

Notes: Whenever we have family get-togethers with Grandma, us Belcher girls sort of "expect" these cookies...in fact, if Grandma hasn't had a chance to make them, we are all highly disappointed. Knowing this, and being the amazing grandmother she is, Grandma will walk into the kitchen and bake up a few batches for us. Spoiled? We just might be, but we adore Grandma and these cookies! - Leah
