1 T. butter
1 cup finely chopped apple
1 cup sliced celery
1/2 cup chopped onion
1 clove garlic, minced
2 T cornstarch
2 tsp curry powder (optional, if you don't like curry)
3/4 cup chicken broth (cold)
2 cups milk (could also use coconut milk)
2 cups diced cooked chicken
3-oz can sliced mushrooms, drained (or fresh, sliced)
Hot rice for 5-6 servings
Condiments of choice:
raisins, shredded coconut, chopped peanuts or almonds, green onion slices, chopped green or red peppers. Even pineapple tidbits, mango, papaya, peaches or a fruit chutney. Soy sauce and chow mien noodles.

In saucepan, melt butter, add apple, celery, onion and garlic. Cook till onion is tender. Combine cornstarch, curry, pinch of salt and broth. Stir into onion mixture, add milk. Cook and stir till thick and bubbly. Stir in chicken and mushrooms. Heat . Serve over hot rice and pass the condiments.

I remember grandma Linda making this for us. She called it Hawaiian Haystacks. it was fun to design our own with the bowls of condiments. topped off with chow mien noodle to look like the hay!
