2 T. butter
2 T. flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. dry mustard
1 C. grated cheese
1 C. cooked rice
3 eggs

Directions:
Directions:
Melt butter in medium saucepan. Add flour & spices and mix well. Add milk a little at a time and keep stirring over medium heat until sauce is smooth. Add 1 C. cheese and when melted add 1 C. cooked rice, then 3 well-beaten egg yokes. Fold in 3 stiffly beaten egg whites . Turn into souffle pan or casserole bowl. Bake at 350º for 30 min.
