3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla extract
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tbsp. baking powder

Directions:
Directions:
Preheat oven to 325º. Beat eggs, oil, and sugar, well. Add zucchini and vanilla, mix. Sift all the dry ingredients together--adding 3 teaspoons cinnamon (I use a lot more). Mix all well with other ingredients. Add walnuts and raisins to your taste...they both really compliment the bread. I use little foil pans which are greased and floured.
