2 T. canola oil
2 lb. boneless pork loin, cut into 1 in. cubes
1/2 c. each: chopped onions, carrots and red pepper
1 T. garlic, minced
1 T. dried oregano
1/2 c. flour
2 c. chicken broth, warmed
1 c. diced potatoes
1 -2 cans green chilies
1 tsp. salt
1/2 tsp. pepper

Directions:
In large heavy pot heat oil over medium high heat. Brown pork in batches. Return all of the pork to the pot and add onion, carrots, red pepper, garlic and oregano. Cook, stirring, for a few more minutes. Reduce heat to medium low and stir in flour. Cook, stirring for another minute. Add warmed chicken broth slowly while stirring. Add potatoes, green chilies, salt and pepper. Simmer 1 - 1 1/2 hours until meat is very tender.
