1 bag of lentils, picked over and rinsed
1 cup rice, rinsed
6-8 white or yellow onions, thinly sliced
Olive oil (extra virgin cold pressed)

Vinagrette:
½ cup red wine vinegar
1 cup extra virgin olive oil
Parsley
Garlic cloves
1 tsp. salt
(Mix together in a Cuisinart until smooth)

In a large pot of boiling water with 1 Tbsp. of salt, cook rice for 5 minutes. Add lentils and continue cooking for 15 minutes. Drain in colander and return to pot to dry. In a small amount of olive oil, saute onions in batches until they are very dark, but not burned. Add olive oil to pan as necessary. Salt and pepper the onion and place in a serving bowl. To serve, place lentils and rice on a plate, squeeze some fresh lemon juice over all and salt and pepper to taste. Then add a layer of the sauteed onions to cover. On top of lentils and onions, place the cold tossed salad with cucumbers and tomatoes and dress with the vinagrette.
