4 boneless chicken breasts
Italian bread crumbs
1 egg
4 zucchini
garlic
2 small cans or 1 large can Italian cut up tomatoes
2 cups shredded mozzarella cheese
olive oil

Directions:
Directions:
Preheat oven to 375º. Pound chicken breast until thin. Beat egg and 2 tbsp of water in bowl. Dip chicken in egg wash then dip in bread crumbs to coat completely. Fry in small amount of olive oil until chicken is done. Place chicken in bottom of glass baking dish. Cut up zucchini. In pan saute zucchini and garlic in a small amount of olive oil until zucchini becomes translucent. Add tomatoes and continue to saute for 5 minutes. Pour over chicken. Sprinkle cheese over entire dish. Bake for 30 minutes or until bubbly.

If you do not like zucchini, you can just use tomatoes or replace both with spaghetti sauce. Chicken breasts can be cut into halves and served as smaller portions.
