1 1/2 pounds lean ground beef
1 large onion, chopped(1 cup)
1 large bell pepper, chopped(1 cup)
2 large garlic cloves, finely chopped
1 can(28oz) crushed tomatoes, undrained
2 cups hot water
1 envelope onion soup mix
1tsp italian seasoning
3 cups uncooked rotini pasta
1 1/2 cups mozzarella cheese shredded

Directions:

1. Spray rectangular baking dish, 13x9x2 , with cooking spray.
2. Cook beef, onion, bell papper and garlic over medium high heat, stirring occasionally, until beef is brown, drain. Stir in tomatoes, water, soup mix(dry), italian seasoning and pasta. Spoon into baking dish.
3. Cover tightly with aluminum foil and refrigerate at least 8 hours but no longer than 24 hours.
4. Heat oven to 375º. Bake covered 45 minutes. Sprinkle with cheese. Bake uncovered about 10 minutes or until cheese is melted and casserole is bubbly.
