3 ½ cups plain flour
a small amount of salt
2 eggs
1 2/3 cups milk or water
1 Tablespoon browned (cooked) butter
If want brown bread crumbs in butter to sprinkle on after cooking
Or can add 7 ounces cooked/finely chopped spinach to dough
Or can add 5 ounces grated cheese to dough

Directions:

Sift the flour in a bowl. Make a well in it. Beat the eggs with the salt, then slowly pour it into the center of the flour. Stir as you mix the eggs and flour. Take care to not make lumps. Gradually, add the milk/water. Once mixed, beat with a wooden spoon until the batter bubbles. Have salted boiling water prepared. Press batter through a colander, or through the top of a steamer double boiler. You can also put the batter on a plate. Slowly pour it over the edge and use a knife to slice long shreds into the boiling water. Cook 5-8 minutes. Drain after cooked and mix the butter on it (or bread crumbs.)
