3 eggs
1 1/2 cups sugar
1 cup oil
2 cups shredded zucchini
2 tsp. vanilla

Sift Together:
2 tsp salt
2 1/2 cups flour
3 tsp cinnamon
1 tsp baking soda
1 tsp baking powder

Directions:
Directions:
Beat eggs, sugar & oil, gradually add dry ingredients. Mix well, then add zucchini & vanilla (mix well)
Place in 2 greased & floured loaf pans
Bake at 350ºF for around 50 - 60 min.
