2 C Lobster meat
Lettuce
1/3 C EVOO
2 T Wine Vinegar
1/2 tsp salt
6 drops hot sauce
1/4 tsp. dry mustard
1/2 C Mayonnaise
2 C thinly sliced celery
1 sm minced Vidalia onion
(EVOO=extra virgin olive oil)

Directions:

Cut lobster meat in pieces and arrange on lettuce leaves. Combine remaining ingredients and pour over lobster. Chill for 1 hour or more.
Garnish with minced parsley.
