1 lime, zested and juiced
1 small shallot, finely diced
2 T chopped parsley
1 T sugar (or Splenda to taste)
1/4 tsp. finely chopped scotch bonnet pepper (or Jalapeņo-no seeds)
Coarse salt

Combine all ingredients and chill until ready to use.
Excellent with fish.
