2 whole pheasants
1/2 cup flour
1/4 cup marsala [sherry or brandy can also be used]
salt and pepper to taste

Directions:
Directions:
place the pheasant on cutting board, cover with saran wrap. Take meat mallet and pound thin.
Remove saran wrap, salt and pepper to taste. Dust with flour on both side, saute in butter 1 minute on each side or until light brown. Set pheasant aside, remove from heat. On high heat deglaze pan with marsala [sherry or brandy]. Drizzle sauce on pheasant. Serve with mashed potatoes and asparagus.
