2 lbs. thinly sliced round steak
4 T. vegetable oil
1 c. green onion, sliced
3 c. celery, sliced
2 c. green peppers, sliced
2 (10 oz.) cans mushrooms, sliced
2 c. beef broth
2 T. soy sauce (more to taste)
1/2 c. water
4 T. cornstarch
6 c. hot cooked (white or wild rice)

Directions:
Brown meat in vegetable oil. Add vegetables, beef broth and soy sauce. Cook over low heat for 10 minutes or until vegetables are tender. Stir often. Combine water and cornstarch. Add to meat and vegetable mixture. Stir until thick. Serve over hot rice. Garnish with cherry tomatoes and parsley.
