1 bottle (12oz) kriek lambic beer
or substitute 6 oz cherry juice and 6 oz water
1c soy sauce
1/3 c sweet rice wine, sake or cream sherry
3/4 c packed brown sugar
orange zest from one orange, use a vegetable peeler
(section the orange and use as in personal note)
2 cloves garlic-crushed
1 slice fresh ginger root (1/4" thick) crushed
1 scallion or 2 green onions-chopped fine, green saved for garnish.
4 salmon fillets (6-8oz each)

Directions:
Put all ingredients, except salmon in a large, heavy pot over high heat. Bring to a boil, stirring until sugar is dissolved. Boil 10 minutes more, or until the marinade is thick like maple syrup and reduced by about 1/3. Cool to room temp.Pour marinade over thawed, clean fish and put in the refrigerator for 2 hours. Take Salmon out of marinade and put the remainder sauce over high heat to thicken, again. This time to the consistency of barbecue sauce. Grill salmon on hot grill and brush with glaze.Cook 3to 4 minutes on each side, basting often. Serve with remaining sauce.

I served this on a fresh spinach salad made with green onions, orange slices, dried cranberries & sliced almonds. I placed the fish on top of the salad and poured the warm glaze over all. It is fantastic!!
