2 lbs. lean ground beef
1 onion, chopped
1 garlic clove, minced
2 T. chili powder
3 cups tomato sauce
1 tsp. sugar
1 tsp. salt
1/2 c. sliced black olives
2 - 4 oz. cans chopped green chilies
sliced jalapeño pepper (optional - I use a few canned ones, chopped)
2 c. ricotta cheese ( I use cottage cheese)
1 egg, beaten
2 c. grated Monterey Jack cheese
12 soft corn tortillas
1 c. grated cheddar cheese

Directions:
Directions:
Brown meat and drain. Add onions and garlic; saute until soft. sprinkle with chili powder and mix well. Add tomato sauce, sugar, salt, olives, chilies and jalapeño. Simmer 15 minutes. beat Ricotta and egg together. Set aside. In a 9"x13" pan, layer 1/3 meat mixture, 1/2 the Monterey jack cheese, 1/2 the ricotta followed by 1/2 the tortillas. Repeat process ending with meat sauce on top. Sprinkle with cheddar cheese. Bake at 350ºF for 30 minutes. Serve with toppings: green onions, sour cream, salsa.
