1 c Quinoa (Keen-wa)
1 1/2 c water
pinch of salt
Boil gently for about 15 minutes, until water absorbed. Cool
1 bunch green onion
6 oz of crumbled Feta Cheese
handful of fresh basil
8 oz of grape tomatoes
1 lemon
4 T oil (optional)

Directions:
Directions:
Chop onions, cut tomatoes in half (scissors work well), chop basil. Stir all together with quinoa and feta in a large bowl. Grate the zest off the entire lemon. Juice the lemon. You can stir in a couple of T of olive oil. Sprinkle the lemon juice and zest over the mixture, stir and refrigerate. Serve cold.

Quinoa is the "wonder grain". It has the largest germ and highest protein of any other. I find it in bulk by the rice or in a box by packaged grains. Try it, you'll be happily surprised!
