1 c. butter
1/2 tsp. salt
2 c. brown sugar
1 tsp. baking soda
2 eggs
1 tsp. baking powder
3 1/2 c. flour
1 tsp. almond extract

Filling:
1/2.lb. ground almonds
1 egg
1 tsp. almond extract
1 c. white sugar

Dough:
Cream together butter and sugar. Add eggs and blend until smooth. Blend in all other ingredients into a smooth dough. Roll out dough on a lightly floured board (counter top) until about 1/8 " thickness. Cut out two circles per cookie with a glass or cookie cutter.

Filling:
Mix ingredients and put about 1 tsp on the centre of every other circle of dough. Cover with remaining circle and gently press around edges. Brush each cookie with egg yolk wash and press whole almond on top.
Bake at 375º F for about 15 minutes. Remove from cookie sheet and cool on waxed paper. Store when cool.
