Whole wheat spaghetti
2 - 3 T. olive oil
1 red pepper (chopped)
1/2 lb. mushrooms (sliced)
1/2 green pepper (chopped)
1 medium onion (chopped)
2 - 3 cloves garlic (crushed)
1 big tin of diced tomatoes
1 T. Italian seasoning (or more to taste)
fresh basil
salt and pepper to taste
Parmesan cheese

Prepare spaghetti according to package directions.
Heat oil in pan and add first five ingredients. Saute over low/medium heat until mushrooms are nicely browned. Add the tomatoes, seasoning, basil, salt and pepper. Simmer with no cover so that the liquid from the tomatoes evaporates slowly. When most of the liquid is gone, but before the tomatoes are dry, turn pan off. Place spaghetti on plates, add topping and finish with parmesan cheese.
